There’s a magical symbiosis between sweet, earthy roasted beetroot and velvet soft goat’s cheese that makes it a signature pairing. The salty herbaceous notes of goat’s cheese lend a great marriage with so many ingredients and dishes including delicate pastas, tarts, and ANYTHING fig related! But for me, there’s something particularly exciting about beets and chevre that hits the spot! Enjoying vino and beets is also super fascinating!

There are not many foods that I would say do so... but boasting so much earthy, nutty notes, beets pair exceptionally well with natural wine and skin contact styles! Keep an eye out for @innatewines masterfully crafted skin contact wines made with Californian grown heritage Italian and Rhone varietals such as Tocai Friulano, Carignan, Mourvedre, and more. The entire series is alive with character, edginess and charm.

Another apt option is any dry sparkling wine of the world, pairing beautifully with the saltiness of goat’s cheese. If you seek high-value French bubbles outside of Champagne, look to Languedoc in southern France for fresh, dry, and elegant wine.
