Nina West - Lead Sommelier at Republique, Los Angeles, talks about her job role as a sommelier. She recollects her first week at the job, and her journey from joining a restaurant which didn't previously have a seperate wine menu, to getting to a dedicated wine list that is 117 pages long.
She further discusses the traits that make a great sommelier, her wine list and pricing decisions, distributor relationship management, and sommelier training.
